Why temperature is the odd one out
Celsius, Fahrenheit, and Kelvin all measure the same physical property but start counting from different zero points, 0°C is the freezing point of water, 0°F is a different reference entirely, and 0 K is absolute zero. Because of this offset, converting between them requires adding or subtracting a constant in addition to scaling, rather than the pure multiplication that works for length, area, volume, and weight conversions.
